Wein Crème (Wine Cream)
Zehn Eierdotter werden in einem Hafen gut mit einen ½ Esslöffel voll seinen Starkmehl gut abgerührt dann ½ Liter Wein gestoße man Zucker welcher auf Zitronen abgerieben werde dazu und Schlägt ¼ Stunde mit einem Schneebesen ab dann stellt man den Hafen auf Kohlenglut und führt fort zu Schlagrahm bis es ein ganz dicke Crem wird welcher auf einen gehackten Pistazien bestreut.
